The Staff Canteen

Jordan Bailey is the chef AND owner of two Michelin-starred Aimsir in Kildare, Ireland. 

He began his career as a chef working for Phil Thomas at Roswarne Manor, before joining Simon Hulstone at Elephant in Torquay. He then went to work for Sat Bains before heading to Norway to be Esben Holmboe Bang's head chef at  Maeemo.

Career to date

Originally from Cornwall, Jordan imagined a career in architecture, but finally decided the lifestyle wasn't for him. 

As a college student, he was given the opportunity to work for Simon Hulstone and he never looked back. 

He soon became an avidly competitive chef, taking part in the South West Chef of the Year and the Craft Guild of Chefs Graduate Awards. He leant his labour to Simon Hulstone for the Bocuse d'Or competition as well as for the culinary Olympics. 

While his time with Simon Hulstone gave him a solid grounding and taught him respect and love for homegrown produce, he learnt the value of military discipline at Sat Bains' restaurant, where he worked for two years. 

He sent his CV to Esben Holmboe Bang in the hope of getting a stage at Maeemo and landed himself a job. He started on pastry, was promoted to sous-chef within four months and to head chef in twelve. 

There, he helped improve the symbiosis between the development team and the kitchen team, and was head chef there when the restaurant received its third Michelin star. 

He left Maeemo in 2017, with plans to open his own restaurant. 

Aimsir Restaurant 

Set in the centuries-old Cliff at Lyons Estate in Kildare, the chef and his wife Majken- who he married after meeting her the two-star Michelin restaurant she worked at in Denmark, Henne Kirkeby Kro - fell head over heals for the location as soon as they visited it. 

They had toured around the country before they chose the location, where both the quality of the produce and the culture - which afforded the couple support from locals and chefs, and for Jordan was highly reminiscent of his Cornish home - struck a chord.

Almost all the ingredients on the 18-course tasting menu at Aimsir comprise Irish produce, other than sugar, which is the result of a dying sugar beet industry in Ireland. 

Despite delays in the planning, construction and renovation of the restaurant, Aimsir opened its doors in May 2019 and was awarded two Michelin stars just five months later. 

Surrounded by an A-star team - which includes former head chef at Melbourne's Vue du Monde, James Bevan and Jordan's wife, Majken Bech-Bailey, the general manager of the restaurant - the chef is one of a handful to have received the accolade in such a short timespan, promising great things to come.
