He started his career at Raymond Blanc at Le Manoir and cites Gary Young as one of his industry role models.

Do you have a favourite type of cuisine?

I’d say I create fun food, I cook food I like to eat. My favourite type of cuisine is french/british, I’d say that’s my style, with a touch of Asian in there.

How did you become a chef?

Learnt under Raymond Blanc at Le Manoir at 18.

Where have you worked?

Backgrounds Michelin and AA Rosette with some casual fast food in there too. Boutique bowling alley, gastro pubs, done a bit of everything.

Who are your mentors/role models/people you look up to?

Gary Jones - legend!

What is your guilty pleasure dish?

Chicken nuggets!

What is the best thing /worst thing about being a chef? 

Best is you go to work loving your job and create daily. Worst is 110% the work life balance is tough. Mines ok now, but in the past it’s been a killer and missed so much.
