Chef Gary Kilminster takes us through How to make Pomme duchesse. A simple process that requires good practice, this is used as a basic preparation for young Chefs and industry professionals as part of their basic training.

To make Potato duchesse we take our basic mashed potato, cooked down in salt water, pureed, add in cream and butter to this, we're going to add egg yolk this will allow the potato to glaze after we baked it, mix the potato together with the egg yolk making sure it's combined and then placed in the piping bag to make the Duchesse butter and an oven proof dish and slowly piping the potato into rosettes nice even shapes, place in the oven to glaze. So after 10 minutes, our Potato duchesse is ready, take out and we have Potato duchesse.
