Dominic Chapman announces new restaurant opening in Henley

Dominic Chapman is gearing up to launch his inaugural restaurant in Henley, situated within the Relais Henley hotel.

Promising a distinctive spin on traditional British fare, the 60-seat establishment will serve breakfast, lunch, afternoon tea, and dinner with a pronounced emphasis on British-sourced ingredients.

Scheduled to open early next year Dominic will assume the role of executive chef with longtime collaborator David Thompson as head chef.

The menu is expect to boast enticing selections such as smoked eel with beetroot and horseradish cream, soused sardines, rabbit, and bacon terrine with Cumberland sauce, Cornish turbot featuring samphire, monks beard, cockles, mussels, and lemon butter, as well as Lancashire hot pot accompanied by pickled red cabbage.

Sweet endings include a chocolate fondant complemented by toffee sauce, almond biscuit, and coffee ice cream.

Discussing the new restaurant Dominic said: "Henley is a beautiful town, and the perfect setting for the style of food we want to introduce to the area. For me, food needs to be uncomplicated and ingredient-led."

"We know the area really well and will be working closely with local suppliers to make sure we can utilize the brilliant produce we have on our doorstep," he added.

How many awards has The Beehive won?

Dominic's new venture follows his departure from The Beehive pub, where he spent nine successful years.

The Beehive has consistently ranked among the Top 50 Gastropubs, holding the 16th position currently and reaching as high as sixth.

It has received a cooking score of six in the Good Food Guide, holds two AA Rosettes, and was recognized as the dining pub of the year in the Good Pub Guide.

While managing the new restaurant, Chapman will continue to oversee The Crown at Burchett’s Green, which he acquired from fellow chef Simon Bonwick last year.

The Relais Henley hotel, a boutique hotel with 40 rooms, is part of The Relais Retreats group, a two-strong hotel business led by owners Grace Leo and Tim Hartnoll.
