Paul Burgalières takes top job at Simon Rogan’s three Michelin-starred L’Enclume restaurant

Paul Burgalières has been appointed Executive Chef at Simon Rogan’s three Michelin-starred L’Enclume restaurant.

Paul takes up the top role at L’Enclume after formerly working as head chef at the renowned Cumbrian restaurant, under the direction of Simon Rogan, for the last six years.

Paul is credited for playing a pivotal role in securing L'Enclume's third Michelin star in 2022, as well as representing the UK in the Le Taittinger Prix Culinaire.

In his new capacity as executive chef, the French-born chef will oversee L'Enclume, Aulis Cartmel, Rogan & Co, and Henrock.

Paul succeeds L’Enclume's former executive chef Tom Barnes, who left restaurant to open his debut Skof, which is set to in Manchester in early 2024.

Who is head chef at L’Enclume?

Alex Rothnie will step into the role of head chef at L'Enclume, whilst Kayleigh Thorogood, formerly the restaurant manager at Michelin-starred Rogan & Co, has been appointed assistant operations manager for Simon Rogan's restaurants in the north-west.

Kayleigh’s journey within the group began as a demi chef de rang at L'Enclume, progressing through roles to her previous position as restaurant manager.

Commenting on the movements within his Umbel Restaurant Group, Simon said: “Our team in the Lakes is hugely talented and I am proud to work with such tremendous individuals. To see them grow and develop is a privilege.”
