CATCH AT THE OLD FISH MARKET HOOKS NEW ASSISTANT MANAGER & SOMMELIER

The team at Catch at The Old Fish Market is excited to announce its latest member, Sebastian Zaleczny, joining as Assistant Manager and Sommelier.

Sebastian has a wealth of experience in the world of hospitality, previously working as front of house manager at Tom Kerridge’s The Hands and Flowers in Marlow and Sommelier De Rang at Chewton Glen.
With a robust background in the culinary and hospitality industry, Sebastian steps into this dual role, poised to elevate the dining experience at Catch at The Old Fish Market. His unique blend of managerial acumen and sommelier finesse promises to further enrich the restaurant's reputation for exceptional service and exquisite gastronomy.

David Hill, Restaurant Manager at Catch at The Old Fish Market, comments: “We’re very excited to welcome Seb to the team here at Catch, his experience in fine dining is second to none and his role as Sommelier is one we have been keen to add within the front of house team. We have lots of developments to share as we enter 2024 and Seb will play an important role within the progression of the restaurant.”

Sebastian's experience spans across renowned establishments, where his dedication to curating memorable dining experiences and profound knowledge of wines has left an indelible mark.
In his role as Assistant Manager, Sebastian will play a pivotal part in overseeing the restaurant's operations, ensuring impeccable service standards, and fostering a welcoming ambiance for guests. Additionally, as a seasoned sommelier, he will further curate the exceptional wine selection that harmonises seamlessly with Catch's innovative cuisine.

Sebastian Zaleczny, Assistant Manager and Sommelier at Catch at The Old Fish Market comments: “News travels fast in the hospitality world, and I had heard such incredible things about Catch at The Old Fish Market, I was drawn to find out more. Everything from the menu to the setting is unique and its approach to sustainability and the local fishing community adds real meaning to the operation. I’m looking forward to working with the team to develop the wine list and pairings and of course contributing to the success of the front of house as we move into 2024.”

Catch at The Old Fish Market was conceived with sustainability front and centre, from supporting the tradition of small fishing boats in Weymouth Harbour, to being able to measure its food miles in feet and inches. The dedication to this ethos can be seen throughout the building, the kitchen, the menu and the wine list.
